Start with sparkling wine or sparkling French cider, followed by your choice of oysters on the half-shell or boquerone and roasted red peppers, served with Sokol Blosser Evolution or Meditrina wines.
The third course offers shrimp bisque or a chilled-shrimp and mixed greens salad with Dijon vinaigrette, with Abacela Albarino or Temperanillo wines.
For the fourth course, choose from seared wild coho salmon and roasted poblano peppers served over linguini, tossed in a saffron tomato sauce and finished with Oregonzola; bacon-wrapped albacore tuna with frizzled onions and sautéed vegetables; fresh whole Dungeness crab, served warm with clarified butter; or beef culotte served with roasted fingerling potatoes and seasonal vegetables. A vegetarian entrée is available on request. Wine pairing for this course is a pinot gris or pinot noir from Four Graces.
Enjoy the after-glow with the sweetest course of all – choose from dark chocolate torte or a vanilla custard, paired with tawny port or espresso.
