Winter Waters Dinner Recap: Epilogue Kitchen

 

Last month, our very own Chef Enrique Sanchez Rodriguez traveled from the docks of Newport to the rolling hills of South Salem for a truly special evening at Epilogue Kitchen. Hosted by Chef Jonathan Jones, this Winter Waters dinner brought together two chefs who share a deep commitment to honoring the ocean—through flavor, seasonality, and sustainable sourcing.

Together, they presented a five-course feast centered around seaweed and responsibly harvested local seafood, with two sold-out seatings and a portion of proceeds benefitting Oregon Shores Conservation Coalition.

 
 
 

Voices for the Coast: A Toast to Marine Conservation

Before the first course hit the table, Annie Merrill—Marine Conservation Manager at Oregon Shores—shared powerful insights on the organization's work protecting Oregon’s eelgrass meadows and rocky habitats, two vital ecosystems along our coast. Attendees also learned about Oregon Shores’ role in the Oregon Ocean Alliance and its ongoing legislative advocacy to safeguard our marine environment.


The Menu:

PNW Oysters Three Ways

  • Raw Hoxie’s Cove oyster with dulse-champagne mignonette

  • Pickled Yaeger Creek oyster with cucumber-carrot relish

  • Baked Yaquina Bay oyster, deviled style, atop a dulse-greens bed with Huichol sauce & cheese

Geoduck & Duck Terrine
With dulse mustard, hard cheese, sea buckthorn jam, and dark rye

Coffee + Dulse Crusted Salmon
Paired with brown butter–poached wild mushrooms, fermented sweet corn & buttermilk grits

Winter NW Cassoulet
Poached and smoked black cod over heirloom white beans braised in a slow fish stock, with an epazote-coriander breadcrumb crust and guajillo-winter fruit preserve

Ancho-Rosemary Tart Shell
Filled with winter citrus & dulse curd, served with tepache apple & syrup

Each course was paired with thoughtfully selected wines from Cooper Mountain Vineyards—generously donated to support the cause.


A Night to Remember

The evening was a beautiful convergence of food, advocacy, and reverence for the ocean. We’re proud to stand alongside partners like Oregon Shores and fellow chefs like Jonathan who believe in the power of local seafood to tell a bigger story.
