Salmon

Flavor Profile

Salmon has a high oil content and therefore has a fairly strong flavor profile. The larger fish have more fat which adds a buttery flavor and texture to the fish.

Season

The Oregon season can open as early as March 15th, although recently the season has started on April 1st. It typically continues through October.

Fun Facts

The dominant commercial salmon species in Oregon is Chinook Salmon (aka King Salmon). We usually sell Alaskan Coho salmon during the off-season. All our Alaskan Coho is harvested by Don Snow on the FV Summerplace, a local Newport boat that fishes in Alaska during the summer.

Oregon’s Wild Salmon: A Sustainable Catch Rooted in Tradition

Oregon is famous for its wild-caught salmon, with species like Chinook, Coho, and Sockeye gracing the state’s pristine rivers and the cool, nutrient-rich waters of the Pacific Ocean. These majestic fish are not only a staple in Oregon’s fisheries but also a symbol of the state’s commitment to sustainable fishing practices and environmental conservation. Whether it’s the rich, buttery flavor of Chinook or the lean, slightly firmer texture of Coho, Oregon salmon is prized for its exceptional taste and high quality.

Flavor & Culinary Uses

Oregon salmon is known for its vibrant color, succulent texture, and rich, slightly sweet flavor. Whether grilled, pan-seared, smoked, or baked, it pairs wonderfully with a variety of seasonings, from simple salt and pepper to more complex marinades with honey, mustard, or citrus. Salmon’s natural oil content keeps it moist, making it ideal for grilling and slow-roasting. It's perfect in everything from traditional salmon fillets to hearty salmon chowders, sushi rolls, or even a tangy salmon salad.

Fishing & Sustainability

Oregon’s salmon fisheries are deeply committed to sustainability and conservation. Wild salmon are caught using environmentally responsible methods, ensuring the protection of their habitats and minimizing bycatch. Additionally, stringent regulations help protect spawning populations, allowing for healthy salmon runs year after year. Salmon farming, when done, is carefully regulated to minimize environmental impact and maintain healthy fish stocks.

Wild-caught in the cold, clear waters of Oregon, this premium fish represents the best of sustainable seafood. From the river to the table, Oregon salmon offers a delicious, nutritious, and eco-conscious choice for your next meal.
